Led by an Australian food artist and chef named David Thompson, who creates dishes that are masterpieces but whose roots are in the kitchen of Siam. The base of the kitchen are the successful dishes of traditional Thai cuisine, food that the Thais usually make in their homes.
Thompson, who came to Bangkok in 1980 and fell in love with it and its kitchen, creates culinary art by combining a variety of cooking techniques, one of the world's leading. He opened his first Nahm in London and was the first to win a Michelin star as a Thai restaurant. Since then he returned to Bangkok and opened the Nahm at the Metropolitan Hotel. Today it ranks among the best restaurants in the world. In 2014 the restaurant even earned the title of Best Restaurant in Asia.
Thompson has become an expert on local raw materials. Among the recommended courses are the curries he likes best to cook, including curry shrimp and oranges with coconut hearts, curry panang with smoked beef and peanuts, shallots and chili leaves, blue crab curry with coconut and turmeric. Try the mackerel salad with the pomelo, lemongrass and lime and the fried egg dish, with shrimp and chicken.
